Chipotle Mac ‘N’ Dogs

Ingredients

1 package of macaroni and cheese; any flavor or style

Milk; amount called for on the box of macaroni and cheese

1/4 cup chipolte-flavored mayonnaise

4 hot dogs of choice; sliced into nickel sized

pieces 1/4 of an inch thick

1/2 teaspoon dried cilantro

Prepare the macaroni and cheese according to package directions except replace butter with 1/4 cup chipolte-flavored mayonnaise. Add in the cilantro and hot dogs when the macaroni and cheese has eight minutes of cooking time remaining.

If your box of macaroni and cheese instructs you to boil the noodles, add the cheese sauce and other ingredients, then boil your hot dog pieces for eight minutes in a separate pan as you boil your noodles. Combine all ingredients after hot dogs and noodles are done cooking.

Let dish stand a couple of minutes before serving.

Sautéed Red Pepper and Corn Dish

Ingredients

1/2 tablespoon olive or canola oil

1 red pepper, diced

1 (15 ounce) can corn, undrained

1/8 teaspoon salt

1/8 teaspoon pepper

1/8 teaspoon cumin

1/8 teaspoon paprika

In a medium sized skillet add a 1/2 tablespoon of olive or canola oil and red pepper; sauté over medium-high heat. Once red pepper becomes more orange in color, add the undrained can of corn, salt, pepper, cumin and paprika. Stir together and let cook until corn is done.

Time: 10 minutes
